• The Polin is the only kosher hotel in Poland. How did this kind of hotel come about?

• Old Galicia, and today’s Lesser Poland, have always been associated with Jewish culture. Recognizing the needs of Jews travelling to Poland, we determined to fill the gap in the touristic market and establish a kosher hotel along with a restaurant. The Polin Hotel and the Cejtel Restaurant are certified kosher, which guarantees the highest quality. The hotel offers 32 high standard rooms, and being located in the vicinity of Krakow’s airport is another asset which can encourage travelers to take advantage of our offer. Every guest at our hotel will have the opportunity to experience traditional Jewish dishes along with the special Galician cuisine served by our chef. Maintaining the kosher standard puts certain constraints on hotel operations, hence we make it our goal to offer the highest quality, which is confirmed by our certification.

• What conditions must be fulfilled for a hotel to qualify for kosher status, and what obligations does it entail?

• There are many conditions that must be satisfied. In order for the Polin Hotel to host guests who observe the requirements of Judaism, we have to have a synagogue, a place where they can devote themselves to prayer on Friday evenings. We are currently adapting space to create the synagogue. The kosher food in the Cejtel Restaurant is another service for our Jewish guests. The Polin Hotel has two separate kitchens – the milk kitchen and the meat kitchen – which are under the constant supervision of the mashgiach. Having these facilities, it’s possible to prepare traditional meals according to kosher standards. The experience we have acquired through catering, which is also part of the hotel’s services, enhances the quality of the menu that we are able to offer. The Polin Hotel and the Cejtel Restaurant are also fully prepared to serve our guests on their Sabbath, which includes a ban on the use of electricity and electronic payment methods. We understand and respect these and other requirements of the Sabbath.

• Jewish culture in Krakow is undergoing a renaissance. At the same time the city is a popular destination for tourists from Israel and the diaspora. What role does your hotel play in these processes?

• The growing cooperation in tourism between Poland and Israel in recent years has produced an incredibly active exchange between our countries. In 2017 nearly 400,000 Israeli citizens visited Poland. What is interesting is that the travel was not concentrated along the well-beaten paths, i.e. to the Nazi death camps and other sites sacred to Jews, such as the cemeteries and synagogues. Travelers on these trips also visit other beautiful destinations in our country, from Białowieża to Morskie Oko, or a cruise down the Dunajec River. We determined to accommodate our guests from Israel, and also guests who may come from other countries of the world but still have Jewish roots, so we decided to open the kosher Polin Hotel and Cejtel Restaurant. We are also able to offer comprehensive assistance in organizing such services as transportation, excursions, and catering to assure that our guests will enjoy their stay in Poland. We are thoroughly convinced that this outlook at the Polin Hotel and Cejtel Restaurant will win us our guests’ favor, and that the traditions of Polish hospitality and friendliness will be appreciated.

• Polin jest jedynym w Polsce hotelem koszernym. Skąd taki wybór charakteru hotelu?

• Dawna Galicja, a dzisiejsza Małopolska, od zawsze była związana z kulturą żydowską. Dostrzegając potrzeby Żydów podróżujących do Polski, postanowiliśmy wypełnić lukę na rynku turystycznym i stworzyć koszerny hotel oraz restaurację. Hotel Polin i restauracja Cejtel to certyfikat koszerności, który gwarantuje najwyższą jakość. • Jakie warunki trzeba spełnić, by uzyskać status hotelu koszernego i do czego on was zobowiązuje?

• Postanowiliśmy wyjść naprzeciw gościom z Izraela, a także z innych krajów świata, ale mających żydowskie korzenie i dlatego zdecydowaliśmy się otworzyć koszerny Hotel Polin i Restauracje Cejtel. Warunków do spełnienia jest dużo. By hotel Polin mógł gościć podróżnych przestrzegających wymogów judaizmu, powinien posiadać synagogę, miejsce gdzie w piątkowy wieczór będą mogli oddać się modlitwie. Obecnie adaptujemy pomieszczenie na synagogę.
Koszerność kuchni w restauracji Cejtel to kolejny ukłon w kierunku naszych żydowskich gości. Hotel Polin posiada dwie kuchnie – mleczną i mięsną- które są pod stałym nadzorem meżgijacha. Dania tradycyjnej kuchni można przygotować koszernie. Doświadczenie nabyte w cateringu, którym również się zajmujemy, przekłada się na jakość prezentowanego menu. Hotel Polin i restauracja Cejtel to również pełna gotowość na obsługę gości w szabat, zakaz używania elektryczności, środków płatniczych. Te i inne wymogi szabatu rozumiemy i respektujemy.

• Społeczność żydowska w Krakowie odradza się. Równocześnie miasto jest celem podróży wielu turystów z Izraela i diaspory. Jakie wasz hotel ma mieć miejsce w tych procesach?

• Nawiązanie współpracy turystycznej pomiędzy Polską a Izraelem w ostatnich latach zaowocowało niesamowicie aktywną wymianą pomiędzy naszymi krajami. W 2017 roku blisko 400 tys. obywateli Izraela odwiedziło Polskę. Co ciekawe nie były to wycieczki utartymi szlakami, przebiegającymi jedynie po dawnych niemieckich, nazistowskich obozach zagłady czy żydowskich obiektach sakralnych, takich jak cmentarze czy synagogi. Ich uczestnicy odwiedzają także, a może nawet przede wszystkim piękne miejsca naszego kraju: od Białowieży po Morskie Oko czy spływ Dunajcem. Jesteśmy przygotowani na kompleksową pomoc w organizacji transportów, wycieczek, cateringu, tak by nasi goście mogli cieszyć się pobytem w Polsce.
