The art of creating a flavor

The restaurant recently opened at 15 Kanoniczna Street is an intriguing place. The walls are ancient, but the cooks, Michał Cienki and Wiktor Kowalski, are young and talented. They love tradition, but they have their own contemporary perspective on it. And they are rediscovering Polish cuisine for us.

– “It’s not a matter that we go looking for old forgotten recipes and find a place for them on our menu. It’s more that they are an inspiration, since we call up flavors from the past, but apply them to our own creations”, says Michał Cienki.

This is no doubt why every one of the chef’s recommendations makes the diner lose all sense of moderation from the first bite.

– “We prepare our dishes with the very best of ingredients, and don’t limit ourselves to local products. Then we serve them in some unusual and surprising style. When we’re preparing a duck, we don’t focus just on one element, we take the whole duck. So we do different things with the breast, the leg, or the heart”, Wiktor explains.

“You will be treated to Polish fish such as perch-pike, sturgeon, trout, and carp”, adds Michał. “Some of them are permanent elements of our menu. Others depend on the season. This is why our guests can expect tasty surprises every day. Sometimes they will find more than one surprise.”

– “The dishes at the “Art” restaurant have their connections with tradition, but we serve them in our own original way: we offer żurek (the classic Polish sour rye soup) using our own starter, along with marinades, and also pickled vegetables and vinegars. Getting back to connections with traditional flavors, we serve a rabbit with a gravy based on giblets and bread brine”, the chefs tell us. “We also use a bounty of goods from Malopolska.”

– “Things like local honeys, sauerkraut from Charsznica, and smoked plums are just a few examples of the rich pantry our region has to draw from. From Podhale we can get delicious lamb and cheeses, of course, only when they are in season. It’s the same with the raspberries and strawberries from local organic producers, and we don’t limit them to our desserts”, Michał adds.

Both of the young chefs take part in numerous cooking competitions, and they’re setting a new trend. Bravely and with flavor. Have you already tasted their pierogi? Try them; the dough is made using spelt flour and the filling is prepared from ground thyme. It’s simply ‘heaven in your mouth’!

The restaurant is open from 12 noon to 11 p.m., with a break from 4 p.m. to 6 p.m. During lunch time there is a sampler plate of five dishes called “Let’s get to know eachother”, and in the evening a 9 or 12 item sampler plate is available. And for the traditionalists, the chefs recommend dishes from their menu of original creations. A wine meticulously selected by the restaurant’s sommeliers makes the perfect accompaniment to dinner, since the selection of wines in the “Art”’s cellar is quite unusual. They come from all over the world, and among the more than 100 varieties in the permanent collection are many that you won’t find anywhere else in Krakow. The beautiful old walls at the foot of Wawel and a few steps from the Royal Road are an exceptional location where you’ll find an exceptional offering of food and wine.

Niedawno otwarta przy ulicy Kanoniczej 15 restauracja intryguje. W starych murach gotują młodzi, utalentowani kucharze Michał Cienki i Wiktor Kowalski. Kochają tradycję, ale mają na nią własne współczesne spojrzenie. Dlatego polską kuchnię odkrywają dla nas na nowo.

Nie chodzi o to, że wyszukujemy stare, zapomniane przepisy i umieszczamy je w karcie. One są raczej inspiracją, bo przywołujemy dawne smaki, ale w naszej kreacji – mówi Michał Cienki.

I pewnie dlatego każda z propozycji Szefów kuchni sprawia, że o umiarkowaniu w jedzeniu zapomina się już przy pierwszym kęsie.

Potrawy przygotowujemy na bazie najlepszych, nie tylko regionalnych produktów i podajemy w nietypowy, zaskakujący sposób. Przygotowując kaczkę nie skupiamy się tylko na jednym elemencie, wykorzystujemy ją w całości, inaczej zatem przyrządzimy pierś, udko czy serce – opowiada Wiktor.

– Znajdziecie u nas polskie ryby takie jak: sandacz, jesiotr, pstrąg i karp zatorski – dodaje Michał. – Niektóre zagościły w karcie na stałe. Inne pojawią się w zależności od pory roku. Dlatego każdego dnia, czeka na naszych Gości smakowita niespodzianka. A bywa, że kilka takich niespodzianek.

Dania w restauracji „Art” nawiązują do tradycji, ale podajemy je w naszym, autorskim wydaniu; żurek na własnym zakwasie, marynaty, popularne ostatnio kiszonki czy octy. Wracając do tradycyjnych połączeń smakowych zestawiamy comber z królika z sosem na bazie na bazie podrobów i kwasu chlebowego – mówią Szefowie kuchni. Korzystamy też z dobrodziejstw Małopolski.

Lokalne miody, charsznicka kiszona kapusta, wędzone śliwki to tylko niektóre przykłady z bogatej oferty naszego regionu. Z Podhala będzie pyszna jagnięcina i sery – oczywiście wtedy, kiedy przyjdzie na nie sezon. Podobnie jak maliny czy truskawki z lokalnych, ekologicznych plantacji, które wykorzystamy nie tylko do deserów – dodaje Michał.

Obaj młodzi Szefowie kuchni – uczestnicy wielu konkursów kulinarnych – wyznaczają trendy. Odważnie i ze smakiem. Jedliście już pierogi w ich wydaniu? Spróbujcie, bo ciasto z mąki orkiszowej i nadzienie z grasicy to po prostu niebo w gębie!

Restauracja czynna jest od godziny 12 do 23; z przerwą między godziną 16, a 18. W porze lunchu serwowane jest menu 5 daniowe pod hasłem: „Poznajmy się”. W godzinach wieczornych menu degustacyjne jest 9-cio, bądź 12-sto daniowe. A dla tradycjonalistów Szefowie kuchni proponują dania z autorskiej karty dań. Do posiłków doskonale komponują się wina starannie dobrane przez restauracyjnych sommelierów. No, bo wybór win w piwniczce restauracji „Art” jest niezwykły. Pochodzą z całego świata, a wśród dostępnych tu stale ponad stu gatunków są takie, których nie znajdziecie w żadnym innym miejscu w Krakowie. Piękne stare mury u stóp Wawelu i kilka kroków od Drogi Królewskiej są wyjątkowym miejscem, dla wyjątkowego menu i dla win.
