Podhale seen from the kitchen, or a culinary journey along the trail of the best dishes of the regio

 The ‘Tastes of Podhale’ is the first culinary trail in the region. It was created to promote regional flavours, but also because the fashion for cooking, culinary workshops, catering, blogs about food, programmes about cuisines of the world reached also the Tatra Mountains.
– Thanks to this fashion we have seen a wealth of our tastes and abilities. The project was a kind of a tourist track that promotes tourism in the region and a discovery of new places from the perspective of the kitchen – says Agata Wojtowicz, president of the Tatra Chamber of Commerce.
On the trail ‘Tastes of Podhale’, there were thirty restaurants and pubs from Biały Dunajec, Białka Tatrrzańska, Bukowina Tatrzańska, Małe Ciche, Murzasichle, Poronin, Szaflary, Witów, Zakopane, and Ząb.Chefs and cooks representing various restaurants and inns had an opportunity to ‘flash’ their culinary skill and present their exemplary regional dishes – flagship dishes.
– Our ambition is to create the prime league of catering in Podhale. A good team is built for years, and success is not only the work of the competitors, but also work of a good manager and coaches. Some restaurants and inns had long distinguished themselves in the market and those were invited to participate in the project. Others found their way to us from the ads, but some had to be rejected – explains Agata Wojtowicz.
The thirty qualified chefs prepared dishes that were evaluated by recognized authorities of the culinary art: Robert Sowa and Sylwester Lis, and they were given a chance to present their culinary talents. Development and education in any field is extremely important, thus also in catering one needs to be vigilant, follow novelties, observe and look for their own solutions.
– The training by the culinary celebrities made ​​a sensation and it gave an opportunity to talk, exchange ideas and learn. Training of waiters and waiters` assistants turned out to be a surprise to the participants. It mercilessly exposed the lack of knowledge and standards, and the quality of service is essential. This, however, leaves a lot to be desired – says Agata Wojtowicz.
Krystyna Zabrzewska, president of the Association for the Development of Podtatrze, adds: It is worth remembering that the project was not a lesson in cooking. The idea was to draw attention to the importance of a local brand, which guarantees good quality catering. I was really most surprised to see the finesse and creativity of the chefs. Some turned out to be true masters of their profession.
The project lasted a year and was completed on September 30, 2014. What remains to be done now is only to invite gourmets to the newly opened trail.
– Thirty delicious dishes which were presented in the project have been certified. We did not choose the best dish, as everything is worth tasting – adds Krystyna.
– I just love lamb especially that from Podhale, but I was seduced by the taste of goat meat and venison and charmed by simple dishes such as bryndza cheese soup or cream of beets. Not to mention trout. But, what is important for me apart from food is the place, climate, service and everything that adds to a good taste; hence the title of the project was the ‘Tastes of Podhale’ – adds Agata Wojtowicz.
– The ‘Tastes of Podhale’ trail is a story about love for food and eating, which flows from the Tatra Mountains and ends happily on a plate of a good taste – says the president of the Tatra Chamber of Commerce. – I’m glad we moved away from the stereotype of promoting Podhale only with help of only sheep’s cheese and sour soup. We found a way to consolidate the catering industry and the promotion of exceptional food, naturally, based on regional products.
The project opened the door and pointed to the direction of development but also to the necessary changes. And this is just the beginning. The project of the ‘Tastes of Podhale’ benefited all – customers, participants and the entire foodservice industry. The trail was very popular during the Fifth European Regional Products Fair. It was also one of the honourable members of the Consortium of Polish Culinary Trails at the Polish Tourist Organisation. This is a perfect example that it is possible to do something together, jointly promote and implement products regardless of competition.
– Each of us can discover new, worth recommending culinary places in Podhale and ‘disenchant’ some old ones. This is possible thanks to a joint activity, a strong commitment of some restaurateurs, which resulted in a very professional and ambitious implementation of tasks – think Krystyna Zabrzewska and Agata Wojtowicz.
Gourmets and culinary connoisseurs of regional products and anyone who wants to experience an unusual, tasty adventure is most welcome to the culinary trail. It is an excellent opportunity to get to know Zakopane and Podhale ‘from the side of the kitchen’, touch Polish culinary traditions, taste original dishes, and discover new and interesting flavours.

The project entitled ‘The creation of a thematic path the Tastes of Podhale’ was a response to a grant competition within the LOCAL PRODUCT MAŁOPOLSKA – a development of local entrepreneurship and food processing, based on a partnership initiative of economic education of the inhabitants and a regional system of marketing products from Małopolska, co-financed by Switzerland. The beneficiary of the project is the Association for the Development of Podtatrze and the Lead Partner (co-financing) the Tatra Chamber of Commerce.

Smaki Podhala to pierwszy szlak kulinarny w tym regionie. Powstał aby promować regionalne smaki, ale także dlatego, że moda na gotowanie, warsztaty gastronomiczne, blogi o jedzeniu, programy o kuchniach świata dotarła również pod Tatry.
– Dzięki tej modzie dostrzegliśmy własne bogactwo smaków i możliwości. Projekt, to rodzaj ścieżki turystycznej promującej region, to odkrywanie nowych miejsc przez kuchnię – mówi Agata Wojtowicz, prezes Tatrzańskiej Izby Gospodarczej.
Na szlaku Smaki Podhala znalazło się 30 restauracji i karczm z: Białego Dunajca, Białki Tatrzańskiej, Bukowiny Tatrzańskiej, Małego Cichego, Murzasichla, Poronina, Szaflar, Witowa, Zakopanego i Zębu.
Szefowie kuchni i kucharze reprezentujących restauracje i karczmy mieli okazję „zabłysnąć” kulinarnie i przedstawić swoje popisowe dania regionalne –potrawy flagowe.
– Mamy ambicję stworzenia pierwszej ligi gastronomii na Podhalu. Dobrą drużynę buduje się latami, a sukces, to nie tylko dzieło zawodników, ale praca dobrego selekcjonera i trenerów. Niektóre restauracje i karczmy od dawna wyróżniały się na rynku; te zapraszaliśmy do wzięcia udziału w projekcie. Inne trafiły do nas z ogłoszenia, ale niektórym musieliśmy odmówić udziału – tłumaczy Agata Wojtowicz.
Szefowie kuchni zakwalifikowanej trzydziestki przygotowywali dania, które podlegały ocenie uznanych autorytetów sztuki kulinarnej Roberta Sowy oraz Sylwestra Lisa. Mieli szansę zaprezentowania swoich talentów kulinarnych. Rozwój i edukacja w każdej dziedzinie są niezwykle ważne, a więc także w gastronomii trzeba być czujnym, podążać za nowinkami, podpatrywać i szukać własnych rozwiązań.
– Szkolenie z kulinarnymi celebrytami zrobiło furorę i dało możliwość rozmowy, wymiany poglądów i nauki. Zaskoczeniem dla uczestników było również szkolenie dla kelnerów i pomocy kelnerskich. Obnażyło brak wiedzy i standardów, a przecież serwis to podstawa. W tej dziedzinie mamy wiele jeszcze do zrobienia – mówi Agata Wojtowicz.
– Warto pamiętać, że Projekt nie był lekcją gotowania. Chodziło o zwrócenie uwagi, jak duże znaczenie posiada marka lokalna, która gwarantuje dobrą jakość gastronomii. Największą niespodzianką była dla mnie finezja i kreatywność szefów kuchni. Niektórzy okazali się prawdziwymi mistrzami w swoim fachu – dodaje Krystyna Zabrzewska, prezes Stowarzyszenia Rozwoju Podtatrza.
Projekt trwał rok i został zakończony 30 września 2014 roku. Teraz pozostaje tylko zaprosić smakoszy na nowo otwarty szlak.
– W ramach projektu zaprezentowano 30 wyśmienitych dań, które uzyskały certyfikat. Nie wyłanialiśmy najlepszej potrawy. Wszystkich warto spróbować – dodaje pani Krystyna.
– Kocham jagnięcinę zwłaszcza tę podhalańską, ale uwiodła mnie kozina i sarnina. Zauroczyły proste dania jak polewka bryndzowa, czy krem z buraków. Nie mówiąc o pstrągu. Ale oprócz potrawy, ważne jest dla mnie miejsce, klimat, serwis i wszystko co tworzy „otoczkę” dobrego smaku; stąd tytuł projektu „Smaki Podhala” – dodaje Agata Wojtowicz.
– Szlak Smaki Podhala to opowieść o miłości do jedzenia płynącej z Tatr, kończąca się happy endem na talerzu dobrego smaku – mówi pani prezes Tatrzańskiej Izby Gospodarczej. – Cieszę się, że odeszliśmy od stereotypu promocji Podhala tylko poprzez oscypek i kwaśnicę. Znaleźliśmy sposób na konsolidację branży gastronomicznej i promocję wyjątkowych potraw oczywiście opartych o produkt regionalny.
Projekt otworzył drzwi i wskazał kierunek rozwoju ale i koniecznych zmian. A to dopiero początek drogi. Projekt „Smaki Podhala” przyniósł korzyści wszystkim – klientom, uczestnikom i całej branży gastronomicznej. Szlak cieszył się ogromnym zainteresowaniem podczas V Europejskich Targów Produktów Regionalnych. Znalazł się także w zaszczytnym gronie członków Konsorcjum Polskie Szlaki Kulinarne przy Polskiej Organizacji Turystycznej. Jest doskonałym przykładem na to, że można razem coś zdziałać, wspólnie promować się i realizować bez względu na konkurencję.
– Każdy z nas może odkryć nowe, godne polecenia miejsca kulinarne na Podhalu i „odczarować” te stare. Jest to możliwe dzięki wspólnemu działaniu, dużemu zaangażowaniu niektórych restauratorów, co zaowocowało bardzo profesjonalną i ambitną realizacją zadań – uważają Krystyna Zabrzewska oraz Agata Wojtowicz.
Na szlak kulinarny zapraszamy smakoszy i koneserów produktów regionalnych oraz każdego, kto chce przeżyć niezwykłą, smakowitą przygodę. To doskonała okazja do poznania Zakopanego i Podhala „od kuchni”, dotknięcia polskich tradycji kulinarnych, spróbowania oryginalnych potraw i odkrycia nowych, ciekawych smaków.

Realizacja projektu pt. Utworzenie ścieżki tematycznej Smaki Podhala było odpowiedzią na konkurs grantowy w ramach projektu PRODUKT LOKALNY MAŁOPOLSKA – rozwój lokalnej przedsiębiorczości i przetwórstwa w oparciu o partnerską inicjatywę edukacji ekonomicznej mieszkańców oraz regionalny system marketingu produktów z Małopolski współfinansowanego przez Szwajcarię. Beneficjentem projektu jest Stowarzyszenie Rozwoju Podtatrza, Partnerem wiodącym (współfinansującym) Tatrzańska Izba Gospodarcza.
